THE PROCESS OF MAKING CASSAVA FLOUR (AMALA) || Nigerian Dish

Cassava flour better known as amala is one of the most common meal the Yoruba people of Nigeria are know with, as it's eaten by almost every ethnic groups connect to the Yoruba's and even adopted by other tribe in the country, and today I'll be taken us through the process of how derive cassava flour from the cassava itself.

It's will be recorded that I share a post on how I harvested my cassava some month ago, which I shared here, so today I'll love to share how I transform the cassava to a edible meal called amala, that's common to we the Yoruba people and most Nigerian.

Though it's worthy of note, that Amala can also be be derived from yam, and that's called yam flour, but here I'll be talking about the cassava version of it, So the following are the step by step process of making cassava flour(Amala) from a cassava.


PROCESSES


  • Step 1: Harvesting of the cassava from the farmland, the first thing I did was to harvest the cassava from the farm, although you can as well purchase the cassava in the market if you don't have a farm, so you can here to see how I harvested the cassava.

  • Step 2: Cutting the cassava into smaller sizes and soaking them into a bowl of water till it became very soft. IMG_20220420_082737.jpg

  • Step 3: Once you're certain that the cassava as become soft, then we will start peeling of the peel of the cassava and then place it in a drain where the water can easily drain out.

  • Step 4: Spreading the cassava on a open space where the sun can shine on it and then get it dry, this can take several days before it becomes fully dry.

  • Step 5: Once it becomes fully dry, park in a bag and take to a grinding machine, for it to be blended to be as smooth as a powder.

And there we have our cassava flour.

  • Step 6: Now to prepare the meal all you need to do is, boil some water in a pot, shifter the cassava flour with a tight net drain to remove it chart, then pour into a boiling water till it becomes firm, like the one in the image below.

The cassava is one of the most important crop where many food can be derived from, I've once shared how I made Garri from it here, and will hopefully share the procedure of making fufu from it in the nearest future.
