MAIZE PUDDING RECIPE || MAKING MOI MOI WITH MAIZE RATHER THAN THE REGULAR BEANS

Welcome to my kitchen this beautiful morning, today I'll be taking you through the process and my recipe of making moi moi with maize, MOI MOI is a meal made from beans common to most Nigerians, and until I learnt this recipe I must confess I was like everyone who would think MOI MOI can only be made with beans, but today I'll be sharing the step by step process of how we can make these MOI MOI with maize.

But before I dive into the recipe, I'll like to tell you about my love for homesteading, which as grant me the privilege to be self sufficient in many aspects, without spending unnecessary money when I can easily do those things myself, and one of such are the maize I used in making these MOI MOI, they were all planted by me alongside other crops, though I must also commend the effort and encouragement of @felixxx in setting up the maize Challenge.

***Not to get you bored with my story, without further ado, let dive into the step by step process of my recipe making a MOI MOI with maize.***

INGREDIENTS

ITEMS | QUANTITY

  • | - MAIZE | 10 pieces BEANS | 2 Tin of milk
    SEASONING | 2 Cube PEPPER | 8 Pieces (or according to your taste.)
    SANDS | A pinch ONIONS | 2 Pieces FISH | 1 EGG | 3
    OIL | You either use groundnut oil or palm oil, but here I use palm oil WATER | As much that's enough to suck all the tied pudding.

RECIPE

  • After Harvesting my maize and remove it from the covering, the first thing we'll do is go remove the maize seed from its body.

  • After removing all the maize seed, I realize it won't be enough for the amount of people I'm preparing it for, so I decided to add 2 cup or beans to it, so for the beans, all I did was to remove it chaff, then wash with water alongside the maize.

  • After these I sliced some onions and peppers into the raised maize and beans, then I took it to be grinding machine to blend it, till it become as smooth as the one in the image below.

  • After it was blended, I added the seasoning, salt and mixing it together, after which I tasted it to see if there are perfect, I realize the pepper isn't upto per, so I blended more pepper with the grinding stone and add it to the blended maize, which I finally mix together once again.

  • While doing all the above, I was boiling the egg and fish, and by the time it was ready, I slide them into tiny pieces, so I can just add few pieces into each wrap of the maize pudding I'll be making.

So in wrapping the blended maize I couldn't get the appropriate leafs that would have been more healthy to use, so I resolve into using a nylon.

while wrapping each of the them, I place a water on fire to boil, because it's advisable to put all our wrap pudding inside a boiling water and then left on the fire to boil for as long as possible till the pudding becomes solid.

  • After these we can then cover the pot, so the heat from the fire and water can steam the pudding, and by the time I became very solid like the one we have in the image below, that mean it's perfect, you can then remove it and place it a tray for it too cool off, after which it's ready to be served.
